Bacon & Onion Jam

Information about person or recipe: Karen grew up on a property in the Wanaaring district, which is 2.5 hours west of Bourke. I have known Karen all my life, as her family, her husband's family and my family all originated from the Wanaaring area. Karen now lives in Victoria with her husband, Les. They have three daughters and five grandchildren.

Karen has inherited some wonderful recipes passed down from both her and Les's family members. She is an amazing "home" cook and everyone goes back for seconds. Karen has kindly shared some of her amazing recipes with us for this site.

12 Bacon Rashers, diced small, and cook till light brown
6 Large red onions, diced reasonably small
1 cup Sugar
¾ cup Red Wine Vinegar
2 Tblspns Dried /Fresh Thyme
After cooking bacon, remove to plate to drain
Cook onion in pan in 2 Tblspn oil on low for 30 mins until onion is tender
Return bacon to pan with sugar, vinegar and thyme
Cook partially covered on low, stirring occasionally for 30 mins
Cook uncovered for a further 10-20 mins until mix is a jam like consistency
Spoon into jars
