Marinade for Duck on BBQ

Information about person or recipe: Karen grew up on a property in the Wanaaring district, which is 2.5 hours west of Bourke. I have known Karen all my life, as her family, her husband's family and my family all originated from the Wanaaring area. Karen now lives in Victoria with her husband, Les. They have three daughters and five grandchildren.

Karen has inherited some wonderful recipes passed down from both her and Les's family members. She is an amazing "home" cook and everyone goes back for seconds. Karen has kindly shared some of her amazing recipes with us for this site.

¼ cup Brown Sugar
2 Oranges zested
1 Lemon zested
1 Tblspn Soy Sauce
2/3 cup Chicken Stock
1/3 cup Jam or marmalade
Mix altogether and cook in microwave 2 mins, then let cool
Baste Duck every 20 mins whilst cooking
Place in Q Weber on very low for aprox 3-3/12 hours turning half-way and then turn again so it finishes with breast side up
Rest for 15-20 mins
Tips & Tricks
Cut orange into quarters - soak in marinade prior to basting duck - insert quarters inside duck prior to cooking - adds extra flavour.
