Thai Prawn / Fish Yellow Curry

Information about person or recipe: Karen grew up on a property in the Wanaaring district, which is 2.5 hours west of Bourke. I have known Karen all my life, as her family, her husband's family and my family all originated from the Wanaaring area. We all attended schools in Bourke (and other boarding schools) due to the remoteness of Wanaaring. Karen now lives in Victoria with her husband, Les. They have three daughters and five grandchildren.

Karen has inherited some wonderful recipes passed down from both her and Les's family members. She is an amazing "home" cook and everyone goes back for seconds.

Ingredients
18 Raw Prawns, peeled (substitute with cubed fish fillets)
1 Carrot, diced large
1 Can Coconut Milk
1/2 Jar Yellow Curry Paste
1 Tblspn Fish Sauce (Soy Sauce substituted)
1 Tspn Sugar
2 Medium Potatoes, cubed and cooked
2 Tblspn Zest of Lime
2 Tblspn Oil
1 cup water
1 Onion, cut into wedges
Method
1
Stir Fry Curry Paste with oil over low heat and add Lime Zest

Slowly add Coconut Milk, potatoes, carrot, onion, sauce, water, sugar and bring to boil

Add Prawns, gently stir fry, then lower heat, for 2 mins.
Tips & Tricks
This recipe is a mild curry
If you wish for a hotter curry, use green curry instead of yellow and add a couple of chillies
To serve
Serve with rice and a squeeze of lemon/lime
