Lasagne

Ingredients
                        - Lasagne
 - 700 grams lean beef mince
 - 300 grams lamb mince
 - 2 packets lasagne sheets (I prefer gluten free)
 - 2 medium onions finely diced
 - 1 stick celery finely diced
 - 1 medium red capsicum finely diced
 - 2 cloves garlic finely sliced OR 2 tablespoons crushed garlic from a jar
 - 1 teaspoon each of fresh, parsley, basil and oregano (can used dried herbs but does not taste the same)
 - Pinch of nutmeg
 - Pinch of cinnamon
 - 250g tomato paste
 - 800g tinned diced or crushed tomatoes
 - 2 tablespoons extra virgin olive oil
 - Salt and pepper to flavour
 - Cheese sauce - Ingredients
 - 4 tablespoons butter
 - 4 tablespoons plain flour
 - Salt and pepper to flavour
 - About 300ml Milk
 - 1 cup grated pizza cheese
 
Method
                        - Lasange
 - 1. Heat a large saucepan on medium heat and add oil
 - 2. Add baby roma tomatoes cook lightly and remove from pan.
 - 3. Place onion, celery, capsicum and garlic in same pan, add little more oil if required, and gently fry until cooked. (around 15mins)
 - 4. Add beef and lamb mince and stir until cooked through. Making sure to squash the lumps out of mince so it is a fine consistency.
 - 5. Add pinch of cinnamon and nutmeg. Stir through meat
 - 6. Add tomato paste and mix through thoroughly.
 - 7. Add tinned tomatoes.
 - 8. Cook for around 15 mins stirring occasionally.
 - 9. Add fresh herbs and stir through
 - Cheese sauce - Method
 - 1. Heat saucepan on medium heat
 - 2. Add butter
 - 3. Slowly mix through flour about a tablespoon at a time
 - 4. Add salt and pepper
 - 5. Slowly mix small amounts of milk to mix. Keep stirring and adding small amounts until done. Takes roughly 15mins.
 - 6. Add cup of cheese and allow to melt through sauce.
 - 7. If you prefer a thinner sauce add a little more milk to your liking
 - Assemble
 - 1. Use a large rectangle baking tray.
 - 2. Cover the bottom of the tray with lasagne sheets leaving a small gaps as the pasta expands.
 - 3. Cover with a thick layer of the meat mixture.
 - 4. Cover with a layer of cheese sauce.
 - 5. Repeat layers until mixture is gone. Ensure the top layer is meat and cheese sauce.
 - 6. If you want sprinkle a little more grated cheese on top so it browns better.
 
Cooking Tips & Tricks
                        - If you are not using lean minced beef drain off fat before adding any other ingredients.
