A low carb eggplant dish ..

Information about this recipe: Tonight I made a low carb eggplant dish .. I took shortcuts for lack of time, but this is a delightful low carb version of eggplant parmesan. Also, I didn’t use any parmesan … But u could always add it in if u wish. I used PORQ panko crumbs and they made this dish deliciously low carb. I took a sauce shortcut and used Bertolli jarred marinara. Then topped with mozzarella and fresh basil. Yes it’s old fresh basil that had to get used up, so it has some spots on it but tastes just fine.

Ingredients
  • 1 Eggplant (sliced as thick or thin as you like)
  • 1/2 jar Bertolli marinara sauce
  • Mozzarella to taste
  • Basil to taste
  • 1 cup PORQ panko crumbs
  • 1-2 eggs, beaten
  • Celtic salt to taste (or whatever salt u like)
  • Italian herb spice blend to taste Extra Virgin Olive oil aka EVOO
Method
  • First wash and slice up the eggplant however thick or thin you want. I like mine on the thicker side and I was only cooking for two servings, so thicker slices = less servings, thinner slices = more servings.
  • Next you want to salt both sides of your eggplant and lay them aside on a paper towel while you get everything else ready.
  • Now get out two plates or bowls. On one plate/bowl place your PORQ panko. On the other place your well beaten eggs.
  • Heat your frying pan up with some EVOO, pat your eggplant slices dry and dip them in the egg and then in the panko, being sure to coat each side and the purple edges.
  • Place in pan with olive oil, sprinkle with salt and Italian spices, then drizzle a little olive oil on top. Not too much or they’ll get soggy. Fry till golden brown on each side, seasoning both sides.
  • While those are frying heat up the sauce of your choice.
  • When they’re finished, put a few spoonfuls of the sauce on the bottom of your dish, then arrange the eggplant to your liking, top with more sauce down the middle and a layer of mozzarella cheese.
  • Place in a hot oven, just until the cheese melts. Top with basil 🌿 and serve.
