Ingredients
  • Mayo recipe
  • 1 cup EVOO (extra virgin olive oil)
  • 1 egg @room temp
  • 1T Dijon mustard
  • 1T white wine vinegar
  • Celtic salt (or whatever salt you have) to taste
  • Lemon juice to taste.
Method
  • Mayo recipe
  • Blend the egg for 20 seconds with an immersion blender.
  • Add mustard and vinegar and blend again for 20 seconds.
  • Then slowly add drops of the EVOO in until it starts to emulsify, at which point you can then add it in by streams.
  • Once all the oil is in and ur mayo looks like mayo, add in the salt and lemon juice to taste.
  • Voila = homemade mayonnaise that’s better for you than store bought! Easy peasy lemon squeezy
