Bacon & Onion Jam

Information about Karen: Karen and her husband Les have inherited some wonderful recipes passed down from family members. She is an amazing "home" cook and everyone goes back for seconds. Karen has kindly shared some of her amazing recipes with us for this site.

Ingredients
  • 12 Bacon Rashers, diced small, and cook till light brown
  • 6 Large red onions, diced reasonably small
  • 1 cup Sugar
  • ¾ cup Red Wine Vinegar
  • 2 Tblspns Dried /Fresh Thyme
Method
  • After cooking bacon, remove to plate to drain
  • Cook onion in pan in 2 Tblspn oil on low for 30 mins until onion is tender
  • Return bacon to pan with sugar, vinegar and thyme
  • Cook partially covered on low, stirring occasionally for 30 mins
  • Cook uncovered for a further 10-20 mins until mix is a jam like consistency
  • Spoon into jars
