Boiled Pineapple Fruit Cake

Ingredients
  • 450 g Crushed Pineapple and juice
  • 1 cup sugar
  • 375 g Mixed Fruit
  • 1 tspn Mixed Spice
  • 1 tspn Bi Carb Soda
  • 125 g Margarine
  • 1 cup SR Flour
  • 1 cup Plain Flour
  • Pinch Salt
  • 2 Eggs
Method
  • Grease and paper choice of tin-- down below
  • Boil & Simmer for 3 minutes- fruit, sugar, Spices and margarine
  • Cool to room temperature
  • Add flours, bi carb soda, salt and eggs
  • Cook in 180C Oven
  • 1 mix and 1 1/2 mix in round or square tins = 1 1/2 hours
  • *** 21st Key Tin- 3 mixes-3 hours in 170C oven ***
  • 4 layers Greaseproof / Brown Paper
  • Alfoil on top for 75% of time to stop burning
