Bushman’s Brownie

Information about Elaine: Elaine has been kind enough to provided us with several recipes, which have been passed down through her family. Both Elaine and her mother Mrs Agnes Larkings were / are great cooks and we feel very blessed that Elaine has agreed to share her family recipes with us.

Ingredients
  • 4 cups flour
  • 1 cup sugar
  • 1 cup dripping
  • 1 cup currants
  • 1 cup raisins
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1 teaspoon nutmeg and cinnamon
  • Sufficient milk to mix
Method
  • Sift the flour, baking soda, cream of tartar and spices - mix together well
  • Rub the dripping into the flour mixture
  • Add the sugar, currants and raisins
  • Mix with the milk to make a dough slightly stiffer than that of a fruit cake
  • Place in a lined greased pan
  • Bake for one hour
