Butternut Drops

Ingredients
  • ½ cup margarine
  • ¼ cup sugar
  • 1 egg (separated)
  • ½ teaspoon vanilla
  • ¼ teaspoon salt
  • 1 cup flour
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon rind (zest)
  • 2 tablespoons orange rind (zest)
  • ½ cup Butternut Drops – finely ground
  • Cherries for decoration
Method
  • Cream margarine and sugar well
  • Add egg yolk and vanilla – beat well
  • Sift dry ingredients together
  • Add lemon juice and rind (zest)
  • Mix all ingredients thoroughly and place in a covered bowl
  • Chill in fridge for about an hour
  • Roll into tiny balls (about ½ teaspoon)
  • Dip balls in slightly beaten egg white
  • Roll in ground nuts
  • Place on a greased tray lined with baking paper about 2.5 cm (1”) apart
  • Press ½ cherry on top of each ball and bake at 180 deg for about 25 minutes
