Chicken Chow Mein

Information about this recipe: One of my favorite dishes when having Chinese over the years has been the Chicken Chow Mein dish. I was very excited when Conrad gave me one of his Chicken Chow Mein recipes!!! :)

Ingredients
  • Chicken Breast Fillet / 300 grams
  • Noodles / 100 grams
  • Mixed vegetables / 1/2 litre volume
  • Water Chestnuts - Broccoli - Celery - Onions - Carrots - Beans - Chinese Cabbage
  • Chicken Stock / 1 cup
  • Dark Soy Sauce / 2 teaspoons
  • Corn Flour Mixture / 2 teaspoons
  • Oyster Sauce / 2 teaspoons
Method
  • Pan fry noodles - put on plate.
  • 300 Grams of Chicken Breast fillets / sliced & Marinated.
  • Marinate mixture - 2 teaspoons of cooking oil - 2 teaspoons corn flour mix [water & corn flour] Sprinkle of dry Sherry wine - soy sauce to taste. [let chicken Marinate in fridge over night]
  • Blanch vegetables in boiling hot water [30 Seconds] drain well.
  • Heat wok with medium heat then turn to high heat until hot.
  • Add cooking oil - put in chicken [lay flat around surface] fry as you would with steak to seal, turn the chicken over and keep on frying until 70% cooked. Add 2 teaspoons of oyster sauce and 1 cup of chicken stock, heat until fully cooked.
  • While stirring add vegetables and two teaspoons of dark soy sauce, thicken with corn flour mixture.
