Chicken in the Garden

Ingredients
  • 4 x boneless chicken thighs - be sure chicken thighs are equal in thickness for even cooking
  • Make a Lavender rub combining 1 x Tablespoon each (equal amounts) English lavender, marjoram, fennel and basil
  • Cooking oil - enough to rub chicken thighs and place some in oven proof dish
Method
  • Ground a little lavender to release lavender oil for Lavendar rub
  • Rub cooking oil over chicken thighs
  • Place chicken in oven proof dish with a little extra cooking oil
  • Sprinkle with salt and pepper and Lavendar rub - ensuring thighs are lightly coated
  • Bake on high (200 deg C) for 20 mins or until chicken is cooked through - be sure chicken is no longer pink
