Chicken Peanut Satay

Information about Jenny: Jenny Gibbons (my mother) is a country woman who grew up and lived on the land around the remote Wanaaring area for the first 60 years of her life. She still lives on a few acres about ten minutes out of Dubbo with my father, which they both love. Over the years of living on the land, Mum accumulated many recipes which were either handed down from other family members or given to her by other ladies living on the land, from around the community.

Ingredients
  • 1 tablespoon oil
  • 1 onion - chopped
  • 1 clove garlic - crushed
  • 2 potatoes - chopped
  • 500 g chicken thigh fillets - thinly sliced / strips
  • 1 cup (or 250 g jar) satay sauce
  • 1 cup coconut milk
  • 2 tablespoons crunchy peanut butter
  • 1 tablespoon mango chutney
  • 1/2 cup unsalted peanuts
  • 1/4 cup chopped coriander
Method
  • Heat oil in a pan
  • Saute onion and garlic until onion is tender
  • Add potatoes - saute for a further 2 minutes
  • Stir in chicken strips
  • Cook stirring for 10 minutes
  • Blend in satay sauce, coconut milk, peanut butter and chutney
  • Bring to a boil
  • Reduce heat and simmer for 20 minutes or until chicken is tender
  • Just before serving mix in peanuts and coriander
