Fat Arse Cup Cakes

Information about Kim: Kim is my youngest sister. We all grew up on a remote property, west of Bourke NSW. Living on the land has made Kim a great cook and she is very creative with her food. Kims three kids and husband Mark are big eaters (being farmers), so she always has home made cakes, biscuits and sweets on hand at all times.

Ingredients
  • 200 g soft butter
  • 1 cup sugar
  • 2 teaspoons vanilla
  • 4 eggs
  • 2 1/2 cups SR flour
  • 1 teaspoon baking powder
  • 1 cup cocoa powder
  • 1 1/2 cups thick vanilla yoghurt (or greek yoghurt)
  • 1 cup salted butter
  • 1/2 cup cocoa powder
  • 5 dessert spoons melted choc bits - cooled
  • 1 - 2 tablespoons full cream
  • 3 1/2 cups icing sugar
Method
  • Cream butter and sugar
  • Add vanilla
  • Lightly beat the eggs into the creamed butter and sugar
  • Then add flour, baking powder and cocoa powder
  • Mix until just combined
  • Then add yoghurt and stir in with wooden spoon until combined
  • Cook in oven 180 deg C for 15-20 minutes. Touch lightly if they spring back they are cooked
  • When cup cakes are completely cool, add chocolate cream frosting
  • Melt choc bits in microwave slowly until it is a smooth liquid - let completely cool
  • Beat butter with mixer until light and fluffy
  • Add cocoa powder - beat until combined
  • Mix in cooled melted chocolate (ensure it is completely cooled)
  • Mix through 1 tablespoon cream
  • Add 1 cup of icing sugar at a time - beating until all combined after each cup
  • Adjust the thickness and texture to your liking by slowly adding another tablespoon cream
