Fried Rice

Ingredients
  • 8 cups cooked cold long grain rice (best cooked in a rice cooker)
  • 250 gram diced ham
  • 250 gram diced bacon
  • 1 small chicken, breasts and thighs shredded
  • 8 stalks shallots finely sliced
  • 1 medium to small onion cut in half and sliced thinly length wise
  • 3 heaped tablespoons crushed garlic
  • 3 teaspoons sweet chilli sauce
  • 3 teaspoons lemon juice
  • Soy sauce to your flavour
  • 1 and 1/4 cup frozen baby peas
  • 6 eggs beaten
  • Extra virgin olive oil
  • Prawns optional
Method
  • Heat wok to a medium heat, add a little olive oil to wok and gently cook egg in small portions until cooked. Roughly chop, wrap in alfoil and label.
  • Fry bacon pieces , wrap in foil and label
  • Add a little oil to wok and cook onion and garlic, wrap in alfoil
  • Place a tablespoon of oil in wok add a third of the cold rice, making sure all lumps are removed from rice. Add 1 teaspoon chilli sauce and 1 teaspoon lemon juice. Stir through thoroughly.
  • In this order add roughly one third of all the following ingredients in order mixing through each one before adding the next – peas, shallots, onion, bacon, ham, chicken, prawns and egg.
  • Sprinkle with soy sauce to taste roughly a tablespoon.
Cooking Tips & Tricks
  • This dish does freeze well. I normally place each batch in a large microwave container.
