Jelly Slice

Information about Karen: Karen and her husband Les have inherited some wonderful recipes passed down from family members. She is an amazing "home" cook and everyone goes back for seconds. Karen has kindly shared some of her amazing recipes with us for this site.

Ingredients
  • 1/2 cup Brown Sugar
  • 2/3 cup Coconut
  • 2/3 cup SR Flour
  • 85 g Melted Butter
  • 400 g Can Condensed Milk
  • 150 ml Lemon Juice
  • 2 tspn Gelatine dissolved in 3/4 cup hot water
  • 1 packet Red Jelly Crystals
Method
  • Mix Sugar, Coconut, Flour and butter
  • Press into Lamington Tray lined with paper
  • Cook for 10 minutes in 160C oven then cool
  • Make up Jelly Crystals as per instructions and leave to cool
  • Mix Condensed milk, juice and gelatine
  • Pour over biscuit base
  • Refrigerate until set - about an hour
  • Pour over cooled jelly and refrigerate a few hours until set
