Mushroom Pasta

Information about this recipe: This is great on its own or smaller portions with accompanied by a nice piece of steak. It also freezes fine.

Ingredients
  • 150g of spaghetti pasta
  • 300g mushrooms sliced
  • 2 small brown onions cut lengthways and thinly sliced
  • 1 heaped tablespoon of crushed garlic
  • 150g cream
  • 2 storks of shallots finely chopped
  • 1 heaped tablespoon butter
  • 1 tablespoon extra virgin olive oil
  • Salt and pepper to taste
  • Parmesan cheese (dry or fresh) I prefer dried with this dish
Method
  • Cook pasta
  • Whilst pasta is cooking, in a separate saucepan heat oil, add onion and garlic and cook until tender. Remove from saucepan.
  • Add the butter to same saucepan and fry mushrooms on a medium to high heat. Make sure you remove from heat prior to juices releasing from mushrooms. Add salt and pepper to taste.
  • Drain pasta and add the above ingredients.
  • Stir through 150g cream
Cooking Tips & Tricks
  • Alternately you can cook the pasta, place in microwave safe dish and cook all the other ingredients in the same saucepan. I normally cook this way as I’m not fond of dishes. It works just as well and reheats fine as long as the mushrooms are not over cooked.
To serve
Dish Serve and sprinkle with parmesan cheese and shallots over the top.
