Nanna’s Scones

Information about Jenny: Jenny Gibbons (my mother) is a country woman who grew up and lived on the land around the remote Wanaaring area for the first 60 years of her life. She still lives on a few acres about ten minutes out of Dubbo with my father, which they both love. Over the years of living on the land, Mum accumulated many recipes which were either handed down from other family members or given to her by other ladies living on the land, from around the community.

Ingredients
  • 2 cups SR flour
  • 1 teaspoon baking powder
  • 4 square knobs of soft butter
  • Pinch of salt
  • 1/2 - 3/4 cup milk
  • 1 egg (mix together with milk)
  • Extra flour
Method
  • Combine flour, pinch of salt and baking powder
  • Break up butter and mix through flour mixture with fingers
  • Make a well in the middle of flour mixture using a knife
  • Pour egg and milk mixture into well
  • Bring all ingredients together with a knife
  • Use hands to lightly knead dough on a floured board (extra flour)
  • Spread dough out and use a cup / cutter to cut shapes of scones
  • Flick a tray with water and line with grease-proof paper (water ensures paper sticks to tray)
  • Place scones on tray and paint top with milk
  • Cook for about 15 minutes on 200 deg C
