Plum Jam

Ingredients
  • 2 kg Plums, quartered and de-stoned
  • 1 Litre Water
  • 1/3 Cup Lemon Juice
  • 1.3 Kg Sugar
Method
  • Place Plums and Water in a large pot
  • Bring to boil, then reduce heat, simmer, covered for 1 hour
  • Add Lemon Juice and Sugar, stir over heat without boiling until sugar dissolves
  • Bring to boil and cook , without stirring, uncovered for approx 20 mins or until jam gels when tested
  • Pour into hot sterilised jars and seal
