Information about this recipe: Tips about Ingredients: Plums are best when just ripe! Cloves are small nailed shaped flower buds that are dried. They have a sweet and penetrating flavour. Cloves can be bought whole or ground. Ground cloves are commonly used in baking. They are native to Indonesia.

Ingredients
  • 2.75 kg Plums, halved and deseeded
  • 1.5 kg Sugar
  • 1 tspn Cayenne Pepper
  • 1/4 cup Cloves
  • 3 Pints Vinegar
  • 6 tspn Salt
  • 1 Tblspn Black Pepper
  • 1/2 cup Ground Ginger
Method
  • Tie cloves in a cloth
  • Add all ingredients to a large pot
  • Bring to the boil and simmer until plums are cooked
  • Remove cloves and puree
  • Cool and Bottle
