Tomato Soup

Information about Karen: Karen and her husband Les have inherited some wonderful recipes passed down from family members. She is an amazing "home" cook and everyone goes back for seconds. Karen has kindly shared some of her amazing recipes with us for this site.

Ingredients
  • 1 kg Tomatoes, very ripe & Chopped
  • 1 Tblspn Oil
  • 1 Garlic Clove, crushed
  • 1 onion, sliced
  • Salt & Pepper
  • 750 ml Chicken Stock
  • 1 Carrot, sliced
  • 1 Celery Stick, sliced
  • 500 g Potatoes,cubed
  • Parsley
  • Juice of one Lemon
  • 1 tspn Nutmeg
  • 2 Bay Leaves
  • 2/3 cup Cream
  • 1 dstpn Plain Flour
Method
  • Cook onion and garlic in oil until soft
  • Add rest of veges and stock, cook until soft
  • Remove Bay Leaves and blend soup
  • Add cream and flour and re heat until thickened
