Velvet Pudding

Information about Karla: Karla has always had a passion for cooking. She was such a huge help to me, from a young age of about 12, she would cook our dinner, whilst I was at work. All I had to do when I arrived home from work, was warm and serve it up. We are very grateful to Karla for being kind enough to share some of her recipes with us.

Ingredients
  • 3 cups milk
  • 1/4 cup sugar
  • 2 egg yolks
  • 2 tablespoons cornflour
  • Butter
  • Vanilla essence
  • Pinch of salt
  • 2 egg whites
  • 2 tablespoons sugar
Method
  • Add all ingredients to a saucepan and whisk over high heat until custard texture forms
  • Continue stirring until saucepan is taken off the stove
  • Beat eggs and sugar until stiff and fluffy
  • Pour custard mixture into a lightly greased baking dish
  • Spread meringue mixture over top of custard
  • Place baking dish inside a larger baking tray with water 1/2 way up the side of the custard dish
  • Cook custard for 10-15 minutes at 200 deg C until meringue sets
