Warm Poached Pears with Anglaise Sauce

Ingredients
  • POACHED PEARS
  • 4 pears, peeled
  • 1L water
  • 500g sugar
  • 1 cinnamon stick
  • ANGLAISE SAUCE
  • 300ml milk
  • 30g sugar
  • 3 egg yolks
  • ½ vanilla bean
Method
  • POACHED PEARS
  • Place sugar and cinnamon into pan with water. Bring to boil
  • Add pears and poach until tender
  • ANGLAISE SAUCE
  • Whisk egg yolks and sugar together in a bowl
  • Bring milk and vanilla bean to the boil in a saucepan
  • Slowly add milk to egg mixture and combine
  • Return milk mixture to saucepan and cook out over a low heat. Do not allow to boil as it will curdle
