Cherry Ripe Slice

Ingredients
  • 250 g Coconut
  • 250 g Pack Sweet Biscuits, crushed
  • 125 g Glace Cherries, chopped
  • 400 g Tin Condensed Milk
  • 125 g Copha
  • Cochineal
  • 60 g Cocoa
  • 250 g Chocolate, chopped
Method
  • Put copha, milk and cochineal in saucepan
  • Stir over low heat till melted
  • Place crushed biscuits, coconut and cherries in a bowl
  • Add melted copha mix and stir well
  • Place in slice tray and press out evenly
  • Combine cocoa and chocolate over low heat
  • Pour over slice and regrigerate until set
