Chicken and Mushroom Penne

Ingredients
  • 400 g Penne Pasta, cooked and drained
  • 1 Tblspn Oil
  • 500 g Chicken Strips
  • 500 g Mushrooms, sliced
  • 1 cup Chicken Stock
  • 250 g Tub light Spreadable Cream Cheese
  • 1/4 cup Chives, finely chopped
  • Grated Parmesan
Method
  • Heat oil in frypan on medium heat and cook chicken until brown
  • Add mushrooms and cook further 5 minutes
  • Reduce heat to low, add cream cheese and stock
  • Simmer for 3 minutes, then remove and add chives
  • Add suce to pasta and serve immediately, with sprinkled parmesan
