Cous Cous Salad

Information about Karla: Karla has always had a passion for cooking. She was such a huge help to me, from a young age of about 12, she would cook our dinner, whilst I was at work. All I had to do when I arrived home from work, was warm and serve it up. We are very grateful to Karla for being kind enough to share some of her recipes with us.

Ingredients
  • 250 g Cous Cous - cooked to packet directions
  • 1 tablespoon melted butter
  • 100 g mixed sultanas and dried apricots
  • 80 g pine nuts
  • 2 cups baby spinach leaves
  • 2 cups roasted pumpkin (chopped small after being roasted)
  • Chopped roasted onion
Method
  • Toss all ingredients together
