Curried Tuna Sandwich

Ingredients
  • 1 7oz can tuna
  • ¼ cup currants
  • ¼ cup chopped toasted pecans
  • ½ cup mayonnaise
  • 1 T red wine vinegar
  • 2 T chopped chutney
  • Curry powder to taste
  • ¼ cup minced flat-leaf parsley
Method
  • Combine ingredients and spread thickly onto fresh bread
  • Or use as a filling for pinwheel sandwiches
