Fresh Organic Broccoli Soup

Information about this recipe: I needed to use up some fresh broccoli I had in the fridge, and broccoli soup seemed fitting for this snowstorm ⛄️ as always the measurements were made with my heart and these are visual guestimations 😉

Ingredients
  • 2 Fresh organic broccoli heads & their stalks, chopped
  • Organic Vegetable bouillon
  • 3/4 block of Cream cheese
  • 1/2 Organic White onion, diced
  • Heavy handed splash of Heavy whipping cream
  • 1/2 tsp Garlic powder
  • 1/4 tsp Turmeric powder
  • 1/2 tsp Crushed red bell pepper
  • 1/2 tsp Onion powder
  • 1/2 dried Parsley
  • 1/2 tsp Black pepper
  • 1/2 tsp Coriander
  • 1/2 tsp dried Oregano
  • 1/2 tsp Cumin
  • 1/2 tsp Sage
  • 1/2 tsp Chives
  • Celtic salt to taste
Method
  • First I steamed the broccoli in about 2” of water. When the broccoli was fork tender I added some vegetable bouillon and gave it a mix.
  • Then I added the cream cheese and stirred until the cream cheese was all melted.
  • Then I added in all the herbs & spices and let it simmer for about 5 minutes for the herbs & spices to mingle and wake up.
  • Then I gave the pot a very heavy handed splash of half & half, brought the soup back up to a simmer and then shut off the heat and served.
Cooking Tips & Tricks
  • Peel the big stalks before steaming them, then they’ll be as tender as the rest of the broccoli.
To serve
Dish Garnished with shredded cheese, green onion and Thai crushed red peppers.
