Microwave Risotto

Ingredients
  • 2 T Margarine
  • 2 T Oil
  • 1 Onion, chopped finely
  • 1 cup Aborio Rice
  • 750 ml Chicken/Vege Stock
  • 1 cup Frozen Peas & Corn
  • 1/4 cup Grated Parmesan
  • Salt & Pepper to taste
Method
  • Cook oil and margarine on high for 1 minutes
  • Add onion, mix and cook for 2 minutes
  • Add rice, mix well and cook for 4 minutes
  • Add stock, mix well and cook for 2 x 7 minutes
  • Add vegs, mix well and cook for 1 minute
  • Rest 5 minutes
  • Mix in cheese and seasonings and dollop of butter
