Prawns and wilted Spinach Pasta

Ingredients
  • 150 grams of dried pasta
  • 200g green prawns
  • 150g baby spinach leaves
  • 1 small onion (sliced thinly length ways)
  • 1 clove of garlic finely diced (or 1 tablespoon of crushed garlic)
  • 1 tablespoon sweet chilli sauce
  • 2 tablespoon fresh cream
  • 10 egg tomatoes sliced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon butter
  • Salt and pepper to taste
  • Optional – extra chilli flakes
Method
  • 1. Boil water and cook pasta until al dente strain and set aside
  • 2. Place peeled prawns in sweet chili sauce
  • 3. Place one tablespoon extra virgin olive oil in pot and fry onion and garlic until cooked. Stir it through pasta.
  • 4. Fry tomatoes in the same pan maybe a splash more oil. Mix through pasta.
  • 5. Place butter in same pan and gently cook spinach until just wilted mix through pasta.
  • 6. Cooked the prawns until just turning orange.
  • 7. Add all the above ingredients to pan.
  • 8. Stir through cream
  • 9. Top with a sprinkle of parmesan if you like
