Salmon and Zucchini Quiche

Information about Jenny: Jenny Gibbons (my mother) is a country woman who grew up and lived on the land around the remote Wanaaring area for the first 60 years of her life. She still lives on a few acres about ten minutes out of Dubbo with my father, which they both love. Over the years of living on the land, Mum accumulated many recipes which were either handed down from other family members or given to her by other ladies living on the land, from around the community.

Ingredients
  • PASTRY
  • 150 g butter
  • 300 g plain flour
  • 3 tablespoons cold water
  • SALMON AND ZACCHINI QUICHE
  • 1 tin (420 g) salmon
  • 500 g ricotta cheese
  • Sliced zucchini
  • 4 eggs
  • 125 ml cream
  • Seasoning - salt and pepper
Method
  • PASTRY
  • Rub butter into plain flour until it looks like bread crumbs
  • Add cold water and knead into a dough
  • Add flour to rolling pin and roll out pastry and place into a baking dish (or pyrex dish)
  • SALMON AND ZACCHINI QUICHE
  • Mix salmon and ricotta together
  • Add seasoning
  • Place salmon and ricotta mixture in pastry dish
  • Add sliced zucchini on top of salmon mixture
  • Mix eggs and cream together in a separate dish (add salt and pepper to taste)
  • Pour egg mixture over the top of zucchini
  • Bake in moderate oven (180 deg C) for 30 - 45 minutes
