Strawberry Ice Cream

Information about Judy: Judy Harland (nee Bye) was born and bred in Bourke, north western NSW. Judy has kindly agreed to share some recipes with us on this site, for which we are very grateful.

Ingredients
  • 1 punnet of strawberries
  • 2 teaspoons lemon juice
  • 2 egg whites (beaten)
  • 1 cup sugar
  • Pinch of salt
  • 2 cups whipped cream
Method
  • Add sugar to strawberries and crush
  • Heat strawberries and sugar until sugar dissolves
  • Chill
  • Add lemon juice to berry mixture
  • Fold in cream, egg whites and salt
  • Put in freezing trays and place in freezer
