Information about this recipe: I made Manicotti for dinner … Kayla needed something vegetarian and Seth loves Italian anything, so manicotti it was! Along with cheesy garlic bread on brioche. This stuffed 9 large manicotti, but I like mine over stuffed, so u could easily get 10 manicotti if you don’t stuff them as full as I did.

Ingredients
  • 15-16 oz ricotta cheese (I used whole milk ricotta)
  • 1/2 c Parmesan (I finely grated Parmigiana reggiano)
  • 1 c shredded mozzarella
  • 1 c spinach (I Julienned mine, but finely chopping would be fine too)
  • 1 large egg
  • 1 T Italian seasoning (I added a pinch of lavender)
Method
  • Mix it all together and stuff the manicotti. I used a small teaspoon to stuff mine but sometimes I use a pastry bag to pipe it in, which is much easier.
  • Once stuffed, add a small amount of marinara sauce to the bottom of your baking dish and then layer the stuffed manicotti.
  • Pour the rest of the marinara over the manicotti and sprinkle on some shredded mozzarella down the center of them. Bake covered at 350F for 20-25 minutes.
  • For the cheesy garlic bread, i sliced a brioche loaf and then buttered each slice.
  • Then sprinkled with garlic powder, Celtic salt and Italian seasoning.
  • Then I added mozzarella, finely grated Parmesan and sprinkled with more Italian seasoning and a pinch of lavender.
  • I baked this also at 350F, but just until the bread was a bit crispy and the cheeses were melted.
