Warm Char Grilled Beetroot and Apple Salad with Walnut Dressing

Ingredients
  • BEETROOT AND APPLE SALAD
  • 3 beetroot, peeled and cut into thin wedges
  • 2 large pink lady or gala apples, cored and cut into wedges
  • ¼ cup walnuts, coarsely chopped
  • 2 tbspn Chervil chopped
  • WALNUT DRESSING
  • ¼ cup walnut oil
  • 1 tblspn verjuice
  • 1 tspn grainy mustard
Method
  • BEETROOT AND APPLE SALAD
  • Brush walnut and apple wedges with some walnut oil and chargrill over high heat until just cooked
  • Combine beetroot and apple wedges in a serving dish
  • Pour dressing over. Toss gently and scatter with walnuts and chervil
  • WALNUT DRESSING
  • Combine all ingredients in a saucepan season to taste. Whisk over a low heat until warmed through
